Make a chimichurri mayonnaise

Flavored mayonnaise, which is sometimes known as aioli, is great to spread on sandwiches. It also works really well for dipping your French fries. If you find this mixture to be too loose, which you may depending on the consistency of your chimichurri, just add another tablespoon or two of mayonnaise to thicken things up a little.

Marinate your meat or tofu

Chimichurri is flavorful enough to make a great marinade. All you need to do is place your meat in a bag and add plenty of chimichurri. You'll need about 1/4 cup of chimichurri per pound of meat that you marinate. Store the meat in the fridge for at least 12 hours and up to 24. Then, grill it, roast it, or pan fry it as desired. The flavor of chimichurri is an especially nice match for chicken or pork. It works well for beef, too, although you might want to add some extra salt in that case. If you're a vegetarian or trying to cut back on meat consumption, then marinate a block of tofu instead. The chimichurri flavor will penetrate the tofu and please your palate.

Add it to your omelet

You want it to be in the pan long enough for it to warm up and release its flavors.
